I love butter, not like the eat it right out of the package kind of love, but I believe that butter adds so much to so many things, that margarine just wont do.  I am a diet guru, I know everything there is to know about losing weight and nutrition, although I am still 50 lbs overweight, at least I am knowledgeable!  The one thing that I will never, have never wavered on, is the need for butter in almost everything.  I have greatly reduced my use of butter because of the wonderful world of weight watchers, so I have moved on over to real good, expensive butter.... Irish butter, fresh churned butter, Sea Salted butter from Maine, whatever I stumble upon in the grocer.  I use it sparingly, but I never trade it in, oil or margarine just wont do.  There is nothing like the glimmer of butter melted on top of vegetables or the rich yellow color embedded into a delicious baked potato.  Butter is and always will be the base of almost everything that I cook.  I love butter, not the eat it right out of the package kind of love, but love that never wavers, never replaces and always remembers its value. :-)
